Dexter-Russell3 pack of 3¼"Paring Knives, S104-3PCP, SANI-SAFE Series, Silver, White

I used to work in the produce department of a grocery store and we were given these to do all our trims and cuts with. These knives are fantastic, they stand up well. The blades are very sharp and cut fantastic and smooth and stay sharp for a long time. And when they finally start to dull it doesn't take much to sharpen again. It's been years since I left produce and I've kept my knives going, I ordered these new ones only because we lost the last knife I had and couldn't find it anymore and I can't live in the kitchen or the house without one anymore.

We have had similar knives for years, same basic size, color, and shape, set of four, bought from a big box store and long discontinued. These were the favorite of everyone, perfect size for 98% of kitchen cutting. One got mangled in the disposal, one lost the blade tip, one just disappeared (trash can??). I went looking for replacements and found these. They are almost identical, same exact size, but the handle has little notches for a better grip with wet hands (can't really seem them in the pics) and the blade is WAY BETTER STEEL. The description here says "STAIN-FREE, HIGH-CARBON STEEL BLADE" and the blade says "S304 DEXSTEEL". After six months of continuous use they show no signs of rust or corrosion and I have not had to sharpen them at all. They hold and edge like high carbon steel but are anti rust/stain like stainless and they go thru the dishwasher (knife demolisher) EVERY DAY. Super knives.

There is a reason these are ubiquitous in restaurant kitchens... They are great knives (as are all of the Dexter-Russell restaurant knives.) In the end it's all about the steel. These get really sharp AND hold an edge for a long time before they need re-sharpening. And the handles are extra grippy for use in high volume / wet conditions.These are better than Wusthof and Henckel products at 4X the price.

I purchased a 3-pack of paring knives for use in processing chickens. The knives arrived with pretty roughly ground edges that required some sharpening to smooth out and get sharp enough for my use, but that is my only complaint and is understandable at this price point. The construction is solid and relatively comfortable, and the plastic handles make for easy cleanup. Paired with the Dexter boning and sticking knives, chicken butchering and processing is made easy.

I am in habit of using the paring knife, even for chopping and every regular kitchen needs. I order these as extra as the knife set has two paring knives. These are good knives, after using Three months; I can say they are good, edge is still sharp, and rates were economical. perfect to keep as spare knives.

Very sharp! Handles are larger and fit better in my hand!
